No, eggs should not be stored on the counter any long period of time (no longer than two hours). “Eggs should always be kept refrigerated at 40°F or lower in their original carton to protect them from absorbing odors and moisture loss,” says Maloberti.

Refrigeration, says Maloberti, is key for “maintaining egg quality and safety by slowing bacterial growth.”

How Long Do Eggs Last At Room Temperature?

For recipes that call for “room temperature eggs,” simply remove eggs from the refrigerator up to 30 minutes before using them, or alternatively place them in lukewarm water to reach room temperature while preparing the other ingredients.

However, don’t leave them out at room temperature for much longer than that: “If eggs are kept at room temperature for more than two hours, they should be discarded due to potential bacterial growth,” Maloberti says.

Should You Wash Eggs?

No, washing or rinsing eggs at home is not recommended, because commercial egg washing follows strict safety standards. “If an egg is soiled, gently wipe the shell with a dry, clean cloth,” Maloberti recommends.

“Any eggs that are cracked, broken, or leaking should be discarded to prevent contamination,” says Maloberti. Remember to take a peak at your carton of eggs before buying it at the grocery store—not only do you want to end up at home with a full dozen, but double checking the carton also prevents any unwanted contamination.
